20-Minute Lazy Lasagna Skillet

We broke apart the traditional lasagna. Brown some ground beef (or turkey) in a large deep skillet. Pour in your favorite jarred marinara sauce and a cup of water. Break traditional lasagna noodles into bite-sized pieces and submerge them in the liquid. Cover and simmer for 12 minutes until tender. Stir in a massive dollop of ricotta cheese and top with mozzarella. It tastes exactly like a baked lasagna with zero layering required.

Sheet Pan Fajitas

Slice chicken breasts, two bell peppers, and a large onion. Toss them all directly on a baking sheet with olive oil and a packet of store-bought fajita seasoning. Roast at 400°F for 20 minutes until the chicken is cooked through and the veggies have those beautiful charred edges. Serve straight from the pan with warm tortillas, sour cream, and cheese. It is a colorful, interactive dinner that kids love to assemble themselves.

Crispy Black Bean Quesadillas

The ultimate pantry-staple meal. Drain a can of black beans and lightly mash them in a bowl with a fork, mixing in a teaspoon of cumin. Spread the bean paste on a large flour tortilla, sprinkle heavily with Mexican blend cheese, and fold in half. Toast in a dry skillet for 3 minutes on each side until the outside is golden crispy and the cheese is melted. Cut into triangles and serve with salsa. Insanely cheap and incredibly filling.
